    You probably already know when your company is at its busiest, but how busy are you then? Break down the number of customers who typically visit your business at various times of day. For example, how many customers do you see before noon? How about in the early afternoon? This will give you an indication as to how many employees you need.

  • List the different types of shifts you need covered

    Once you’ve figured out how many customers you see throughout different points in the day and week, list the different type of positions you need to meet those customer needs. For example, how many waiters vs. dishwashers do you need on the schedule to match your Monday morning customer number? Keep in mind that during slower times, staff members can serve double duty— on a Sunday night, the bartender might also be able to function as a waiter.

  • Ask your employees for their availability
